The Jalisco Trail

Highlands, valleys and blue agave

Jalisco is tequila country: Los Altos highland agave leans sweet and floral, while the Valles lowlands around the town of Tequila run earthier and more mineral. Taste both to understand terroir in blue weber agave.

  • Los Altos vs Los Valles — the classic highland/lowland split
  • Brick-oven and autoclave cooking, tahona-crushed expressions
  • Blanco, reposado, añejo and extra añejo aging ladder
